Hazy IPA. An exceptionally pale hoppy ale brewed with pilsner and wheat from Double Eagle Malt, hopped in the whirlpool with Galaxy, fermented with the early haze craze yeast blend, and dry hopped with the dynamic duo of Citra & Mosaic. A beauty of a juice bomb in an approachable package. 5.5% abv

Berliner Weiss-style ale. Tart Northwestern German-inspired ale brewed with pilsner, wheat, and oat malts from Double Eagle, then fermented & acidified the modern way. Acidic, simple, refreshing, citrus. A “Nod” to a classic Philadelphian beer. 3.6% abv

Tart Wheat Ale w/ Watermelon-Washed Coffee. Tart Berliner Weiss-inspired ale brewed with pilsner, wheat, and oat malts from Double Eagle, then fermented & acidified the modern way. Steeped post-fermentation (cold brewed) with Nectar Citrullus Co-Fermented Caturra Colombia Monteblanco (a watermelon-washed light roast) from Poem Roasting! Acidic, fruity, floral, summery. 3.6% abv

Pre-Prohibition-Style Pils. A modern take on early American lager brewing, brewed with Indiana’s-own Sugar Creek 6-row barley and Pennsylvania Bloody Butcher corn malted by Double Eagle. Hopped very gently with two modern favorites, Galaxy & Nelson Sauvin. Fermented with a sturdy lager strain of conflicted origin and cold conditioned to clarity. 4% abv
Communalis | 3.75 / 5.75 / 8.25
KC-style Pils. An homage to a Western Missouri bier brewer, this pale lager is brewed with German-made Pilsner, Vienna, and Munich malts from IREKS, hopped through the boil with Hallertau Mittelfrüh, and fermented with a Monastic German yeast strain. Fermented low ‘n’ slow, lagered and cold conditioned for a total of 14 weeks production time. Tastes and aromas of Ritz chips, porridge/hot cereal, lemon sun tea. 4.6% abv
Galaxie Blanche | 3.25 / 4.75 / 7.5
Hoppy Mixed-Ferm White Ale. Saison/witbier/hoppy ale brewed with Double Eagle Pilsner, raw and malted wheat. Hopped with Galaxy in the whirlpool. Flavored with coriander, white pepper, kumquat juice, and kalamansi puree. Fermented with the ever-evolving mixed culture, with a focus on a Belgian wheat ale strain. Super dry, fruity, peppery, phenolic, hoppy, hazy, pale. 7.5% abv

A juice bomb of a hoppy ale brewed with extra pale Pilsner malt and loads of oats. Hopped with Galaxy & flowable Mosaic, fermented with London Ale yeast, and dry hopped to the max with Citra, Mosaic, and Hydra. Tastes of screwdriver (not from concentrate), candied pineapple, tangelo, red jello & cool whip, soursop. 11.8% abv

Coconut StoutWine. A hybrid of a beer, Incantate is a barleywine with a handful of roasted specialty malts found in stouts. Brewed to a gigantic starting gravity with thousands of pounds of malt and boiled for over 4 hours. Fermented slowly with a blend of yeasts, then conditioned on both raw and hand-toasted coconut. Black in color, thick-bodied, creamy, sweet, roasty, with flavors of dried fruit, chocolate milk, and lots of coconut. 12% abv

Vietnamese Coffee Stout – 2025 edition of our homage to our beloved Huy. This batch is special – in addition to it being a more drinkable ABV, we collaborated with Càphê Roasters from Kensington to add another Vietnamese element to this Vietnamese coffee-inspired stout. Thomas provided us with a bold Robusta, which was cold steeped (like cold brew) during conditioning. The coffee is the star here, but holding it up is a beer brewed with malted barley, oats, and wheat from Double Eagle Malt, various levels of roasted grains, and a good bit of chicory coffee! There’s even some vanilla (Sumatran and Tahitian) to round flavors out. This batch contains *no* milk sugar. 4.55% abv

Imperial Porter. American-leaning dark beer brewed with custom commissioned Mizunara (Japanese oak) conditioned malt. Hopped lightly with PNW hops, fermented with American ale yeast, then conditioned on Mizunara to achieve an oak character like no other. A rare beer using a rare resource from across the globe! Dark chocolate bark, tahini ice cream, burnt caramel, Lancaster County mocha milk, Toblerone, soft oak tannin with a creamy texture. Brewed for the season, straight from the abyss. 9% abv
